Scheid Vinyards
Summary
ColeBreit Engineering (DBA Axiom Engineers) provided mechanical and plumbing engineering for the expansion of Scheid Vineyards’ Salinas Valley production facility, increasing capacity and modernizing operations with advanced winemaking systems and energy-efficient infrastructure. The project included open-top Pinot fermenters with punch-down rails, 25- and 30-ton sloped-bottom fermenters, a traveling pomace press, and a white fermentation program with bladder presses.
Custom process solutions supported gentle handling techniques to enhance wine quality at scale, including a rolling press system that minimized product pumping. High-efficiency glycol systems, refrigeration, aeration, and variable-speed motors were incorporated to reduce energy demand.
Wastewater treatment improvements included pre-screening to reduce BOD and high-efficiency aeration, allowing treated water to be reused for irrigation.
